How to make funfetti cookies:
Make sure to preheat the oven first!
Mix all of your ingredients together except the sprinkles in a large bowl. The cake batter will be thick so don’t be alarmed!

Place on cookie sheets making sure to leave about 2 inches between each cookie. They will spread so make sure to leave room.
You can flatten to 1/4-inch thickness if you prefer.

You want to bake cookies for just a few minutes until the edges are a light golden brown.
If you are using sprinkles, now is the time to add those. The sprinkles in the batter add a ton of color so this step is optional.
Cool and enjoy! It is that easy.

Notes – you can roll dough in sprinkles before baking or add extra sprinkles fresh out of the oven.

If you are still scooping cookies with two spoons, you really need to get yourself somestainless steel scoops!
I have had mine for several years and I use them for all types of baking. I bought the3 pack and used the smallest of the 3 scoops for these funfetti cake mix cookies (and almost all my cookies) and they were just the right size for adults and kids.
The other sizes are perfect for other recipes or meatballs and such. Trust me, they will get lots of use and are well worth the small investment.
